Seasoning blends typically consisting of salt, spices, herbs and acids, are used by meat manufacturers during production to add flavor to their products. The seasoning blends are typically applied or mixed with the raw meat, where attention needs to be paid to ensure the ingredients, specifically raw salt and acids, do not have a negative effect on the meat.
Batters and breading mixes typically contain either a leavening system or an acid, or sometimes both. The leavening system is designed to create lift and a desirable texture in the batter, while acids are often added to impart a unique flavor to batters and breading; often to mimic the flavor of an acidic ingredient like buttermilk.
